Cupcakes and Macarons oh my…

Standing in the class room environment at Karricks Institute attending a cupcake decorating and macaron master class in not how I normally spend my Saturday’s. But it was a very nice change.

Lamb and I booked the class using a coupon website (living social) way back in December and this was one of the first classes we were able to get in to – these things sold like hotcakes, well like cupcakes anyway! The class ran from 10-4pm and I was completely excited about becoming a master of the macaron and rival Magnolia for its decorating. We were told to bring apron, container and long sleeves (this baffled us but the freezing temperatures quickly explained the request).

When we arrived we found two other classes (same topic) were being held downstairs and worked out that we were in the upstairs class. This place is busy – the short courses are new but I imagine with the heavy decrease of international students this is how they might still be able to make some money and am glad there is a place like this in the city – I have lots I would love to learn.

I wish I could show you all the stunning aprons the girls (yup, 19 girls and one male teacher) had on – such prettiness all in one place – it made my sad blue and white stripe staple from ikea seem very dull indeed. So much so I may have just ordered something a little prettier online…

The class surprised me a bit as the cupcakes were pre baked (I totally missed the word “decorating”) and we didn’t actually make the Macarons – just watched the teacher make them, often with pre mixed ingredients but we did get to pipe them. Most of the session involved standing around the front desk watching the teacher (total flash back to school) as he explained the fine art of Macarons (we were advised we were being shown how to make easy Macarons so not shiny or footed which was a little sad) as he mixed and made the fillings. I was disappointed at how little hands on was in the Masterclass macaron component…but such is life and I hoped to pick up some tips.

We got a half hour lunch break so Lamb and I snuck around the corner to Miss Chus for a scrumptious lunch. Upon our return it was time to put the Macarons in the oven and get decorating!

Decorating the cupcakes was a lot of fun – surprisingly I learnt more from the girls around us on the colors, components and how to utilize the icing. I had a lovely hour and a bit making chocolate filigree (as you can see from the above pic not my forte) and decorating using royal icing. I went with a Tiffany theme (how could I not?) and had some help mastering the perfect bow from a lovely girl on our table.

It was then time for our Macarons to come out of the oven (the class teacher again in charge). Sadly they had mostly burnt or been over cooked and looked more like the Italian amaretti biscuits than a macaron. Still troopers that we are we dutifully piped in our lemon curd and chocolate ganache and tided our work benches while waiting for our creations to chill in the fridge.

While it was great to spend a day doing something a little different I am not really sure if many of us (and I am a cooking/baking dunce) took much learning away from the class. However the cupcakes in their shiny red tin do look really pretty in my fridge (I am not sure I can destroy them by eating them) and I have renewed my interest in learning to make Macarons – so if you see a girl hauling around bags of almond meal and eggs next weekend it may well be me!
